Though the Caravelle Hotel’s flagship restaurant still runs long on Western fare and complementary Asian favorites, the new a la carte menu at the eatery on Lam Son Square offers a completely changed line-up.
Anticipating a debut July 1, Executive Assistant Manager – F&B, Juan Costa is steering diners toward several new signature selections.
The first highlight is an appetizer — a puff pastry or mille feuilles of duck liver torchon and vanilla brioche with pineapple chutney and peanut dressing.
For mains a slow braised pork cheek served with lobster and pork fat crackling sweet corn puree, green beans and Asian spiced jus
Costa’s final counsel is a matter of dessert, figs poached in red wine and served with caramelized filo pastry and crème patisserie with cinnamon ice cream.
The main courses range in price from VND 418,000 for a sea bass filet to VND 788,000 for a U.S. black Angus beef strip loin steak.
With views of Lam Son Square and the city’s historic colonial French Municipal Theatre, Reflections was once the home of the CBS News Bureau and today the site of Saigon’s most elegant dining experience.
